GNOCCHI WITH HERBS AND CHEESE

 This is an easy, tasty way to cook an Italian favourite! And finishing it off by frying lightly in olive oil gives it a lovely crispy finish.  

 You Need: 

 250g potatoes

60g Philly Cream or Ricotta cheese

2 tsp Italian Herbs

¼ cup Plain Flour

Salt and cracked black pepper to taste

2-4 tblsp olive oil

  

Method:

 Boil, steam or microwave the potatoes until tender. Drain really well, then press through a sieve to remove all the lumpy bits.

In a bowl, mix together the potato, softened cheese, herbs and salt/pepper.

Gradually knead in the sifted flour, adding more if necessary, to make firm workable dough.

Roll out into a log shape and slice into equal pieces about the size of a macadamia nut.

Roll these portions out again about 2.5cm long and flatten slightly into a lozenge shape. You can mark the outside of them with the prongs of a fork or the small side of a grater (those little ones for grating ginger are ideal). Or you can leave it unmarked if you prefer.

Bring a pot of water to the boil either on the stove or in the microwave. Carefully lower about 6 gnocchi at a time into the water. Simmer til tender or microwave for 2 mins on high.

Carefully remove with slotted spoon and drain on paper towel, rolling over after a minute to drain the other side.

In a frypan, heat some olive oil and fry the cooked gnocchi for a minute or so each side til crispy golden. Drain and serve as they are with a fresh mesculin salad, or toss in your favourite sauce.
