FRANK AND MORRIE'S MANGO CHUTNEY

This recipe originally came from Frank Ashman of Townsville, with variations from Morrie Risdale and lyn - Mango Chutney is everyone’s favourite – use up those green mangos before the fruit bats get them!

 You Need: 

1 bucket of mangos (2 kg raw mango pulp)

1 litre of brown vinegar

1 kg brown sugar

80g garlic, finely chopped

80g fresh green ginger, finely chopped

350g dates, chopped

350g raisins, chopped

1 tsp salt

˝ tsp Cayenne pepper

1 tsp ground Ginger

2 chillies, chopped (or 1 tsp from the jar)

 

 Method:

 Peel the mangos and dice the flesh into small pieces about ˝ cm.

Mix all the ingredients except the sugar, in a big heavy-based saucepan. Bring to the boil and simmer for 30-40 mins. Stir in the sugar and simmer for another 30 minutes, stirring occasionally so it doesn’t stick to the bottom.

Allow to cool then spoon into glass jars.
