PAN FRIED FISH WITH MANGO MAYONNAISE This makes a lot of Mayonnaise – so keep what’s left in a jar in the fridge for next time! You Need: 750g White Fish Fillets ½ Cup Plain Flour seasoned with Salt and Pepper 2 Tblsp Oil 1 Tblsp Butter 3 Egg Yolks ¾ cup Oil 2 tsp finely chopped Mint 1 mango ½ tsp white vinegar cracked black pepper Method: Peel the mango, chop the flesh and process in a food processor/blender until pureed smooth. Beat the egg yolks with food mixer until thick. Gradually beat in the oil, then add the mint, mango, vinegar and pepper. Mix well and chill in the fridge before using. Wash and skin the fillets. Dip them in the seasoned flour and fry in hot oil and butter for about 3 minutes each side. Serve with Mango Mayonnaise and a nice fresh salad.
