HOMEMADE PASTA WITH EASY LEMON SAUCE Making your own pasta dough is easier than you might think – and so much more tasty than the dried variety. But even if you don’t have the time or inclination, you can still used the following sauce with dried or bought ‘fresh’ pasta.
You Need: 2 ½ cups Plain Flour 4 large eggs, lightly beaten
Method: Sift the flour into a bowl or onto a workbench. Make a well in the centre, add the eggs and gradually mix the flour into the eggs. When you have a ball of dough, knead it for about 10 minutes, getting rid of any dried crusty bits that fall off as they will only cause the pasta to break. Cover your pasta dough with a clean tea towel and leave it to rest for half an hour. NB: You can use a food processor to speed up this process and make it even easier! VARIATIONS: You can add all sorts of flavourings to the mixing process – spinach (add with the eggs); cracked black pepper; tomato paste… ROLLING THE DOUGH: You can roll your pasta dough into thin flat sheets then cut into thin strands to make ‘fettuccini’; or cut it into sheets for ‘lasagne’ or divide into two, dropping evenly-spaced spoonfuls of meat or cheese filling on one sheet, top with second sheet and press and cut between fillings to make ‘ravioli’ – the possibilities are endless! You can air dry it and store it in airtight containers for 2 months. To cook and eat right away – drop into a large pot of boiling water and cook til just tender. Drain and serve with your favourite sauce…
LEMON SAUCE: 30g butter 1 clove crushed garlic 2 lemons, grate the rind finely (save some long strands for garnish) 2 cups cream freshly ground black pepper
Melt the butter in a fry pan and cook the garlic gently for 2-3 minutes. Add the grated lemon rind and cream, simmer gently for about 30 minutes or until sauce reduces and thickens. Combine with cooked pasta and stir through to coat pasta thoroughly. Garnish with lemon strands and black pepper.
