BAKED BANANAS IN CARAMEL This has to be the nicest way to eat an over-ripe banana!
You Need:
4 ripe bananas, halved lengthways ½ cup brown sugar 1 Tblsp apple juice 50g butter, melted Cream/Ice Cream to serve
Method: Preheat the oven to about 200C. Arrange the bananas, cut side down, on the base of an overproof dish. Combine sugar, apple juice, butter and pour over the bananas. Bake for 20 minutes til the bananas are tender and the sauce thickens. Carefully lift the bananas out with a flat egg-slice and place in serving bowls. Spoon the sauce over and serve with scoops of vanilla ice cream, or a dollop of fresh cream.
