EASY MICROWAVE BANANA BUTTER

  This is a tasty treat that the kids could make during school holidays. It’s a  great way to use up some over-ripe bananas, and the easy microwave method saves all that “stirring”!

 

 Easy to make, yummy to eat!

You Need:

4 ripe bananas

2/3 cup sugar

3 Eggs

90g butter, cut into small cubes

¼ cup lemon juice

1 tablespoon lemon rind

½ cup orange juice

(a few drops of yellow food colouring)

 

Method:

Fill 2-3 glass jars with boiling water to sterilize (Boil 10 minutes, then dry in oven if you plan to store the Butter a long time).

Crack the eggs into a bowl and whisk well. Strain through a sieve into a microwave-safe bowl – glass is best. 

Peel and mash the bananas, and discard any stringy or ‘brown bits’. Add them to the bowl of egg.

Add the sugar, butter, lemon juice and rind, orange juice and food colouring

Stir to combine, then Microwave on High for 2 minutes. Whisk the mixture, which will start to set around the edges of the bowl, then microwave a further 2 minutes. Continue in this fashion until the mixture is thick and setting well – but take care not to let the mixture boil as it will separate and be no good. 

Pour into glass jars, put the lids on and store in the fridge.

Serving Suggestion:

Can be used on toast, pikelets or as a filling for pastry tarts.

Lyn’s Hint: This method can also be used for lemon butter, orange butter, passionfruit or pineapple butter!
