BLACKBERRY CHEESECAKE Here is a fantastic way to spice up a basic cheesecake by adding your favourite jam!
You Need: ½ cup biscuit crumbs 2 Tablespoons melted butter 500g Philly cream cheese ¼ cup sugar 3 tsp gelatine dissolved in: 1/3 cup hot water 2 tablespoons blackberry jam 200g plain yoghurt ½ cup blackberry jam, extra
Method: Mix together the biscuit crumbs and melted butter. Press into the base of a spring-form pan or line a regular cake tin with plastic wrap. Chill while you prepare the filling. Melt the 2 tablespoons of Blackberry jam in the microwave or in a saucepan and stir into the yoghurt, mixing well. Beat the cream cheese and sugar til smooth. Add the blackberry yoghurt. Whisk the gelatine into the hot water and add to the cheese mixture. Spoon the mixture into the biscuit base. Soften the extra ½ cup of blackberry jam in the microwave or in a saucepan. Swirl through the cheesecake mixture. Refrigerate for a couple of hours til set firm. Then remove it from the tin, slice into portions and decorate with fresh berries or some chocolate sprinkles.
