RUBY’S CARAMEL TART

 This is a quick way to make a caramel tart. No standing around waiting for the tin of caramel to explode! This mixture can be doubled for a good sized tart.

 

You Need: 

 

1 cup milk

1 cup brown sugar

1 Tblsp treacle or golden syrup

1 Tblsp butter

1 Tblsp plain flour

2 egg yolks

˝ tsp vanilla essence

 

2 egg whites

1 Tblsp white sugar

 

 

Method:

Place all the ingredients except the egg whites and white sugar together in a saucepan and bring to the boil, stirring all the time til it thickens. Pour into a baked pastry shell.

Make meringue with egg whites and white sugar – beat the egg whites in food mixer til soft peaks form, then spoon in the sugar. Spoon on top of the cooked caramel tart and if you like sprinkle it with coconut then pop it in the oven for  10 minutes to brown the meringue.

This tart is delicious either hot or cold.
