CARPETBAG STEAK

It's Rodeo Week in the great North West, so here’s one for the cowboys and cowgirls to cook - 

 

You Need: 

 1 steak per person, thickly cut – 2cm or more

1 tin of smoked oysters

2 rashers of bacon

toothpicks 

oil for frying

 

Method:

Chop the bacon into small bits and fry with the oysters for a couple of minutes.

Using a sharp knife, make a slit pocket in the side of the steak.

Push some bacon and oyster mixture into the pocket and secure with a toothpick.

Heat the oil in a heavy based pan, and fry the steak on both sides, the time depends on how thick it is and how well-done you like your steak. 

Serve with salad or veggies and a bundy rum!
