CHICKEN KIEV A LA SCHOLL

 This is a really tasty way to do something different with a chicken kiev…

 

You Need: 

 

4 x crumbed chicken kievs

2 Tblsp Butter

2 x cloves garlic (or 2 tsp from the jar)

2 Eschallots, chopped

½ cup white wine

2/3 cup thickened cream

1 tsp French mustard

1 tsp maple syrup

¼ cup grated cheese

 

Method:

Melt the butter in a heavy pan over moderate heat. Finely chop the garlic and add it to the pan. When the garlic starts to brown, add the chicken and fry for about 3 minutes on each side, or til golden. Add the wine, reduce the heat and simmer for about 10 minutes per side. Remove the chicken from the pan, sprinkle the cheese on top and place under grill (or in oven) until cheese is melted.

With the pan juices, increase the heat and add the chopped eschalots, stirring til they soften. Stir in the cream, French mustard and maple syrup. Stir continually until thickened, adding cream if it looks a bit too thick.

Remove the kievs from grill or oven, place on serving plate, spoon sauce over and serve with your choice of vegetables.
