CHICKEN IN LIME & CHILLI MARINADE

 

This is a nice fresh dish for these hot evenings. Easy to prepare and cook and very, very tasty!

 You Need: 

 400g chicken breast fillets

spray cooking oil

2 Tblsp fresh coriander leaves, chopped

1 lime, cut into wedges for serving

 

MARINADE:

 1/3 cup lime juice

1 tsp finely chopped garlic

2 tsp finely chopped ginger

1 Tblsp soy sauce

1 tsp finely chopped red chilli

2 eschallots, finely chopped

 

Method:

Combine marinade ingredients in a bowl and whisk together.

Add the chicken and mix well.

Cover and refrigerate for at least an hour.

Drain the chicken, reserving the marinade. Heat a frypan, spray with oil and cook the chicken for about 3 minutes each side, basting with the marinade.

Arrange the chicken on a plate with some noodles and steamed veges, and a lime wedge on the side.
