CHICKEN AND AVOCADO WRAPS You can use your imagination and put whatever you like into a ‘wrap’ but if you haven’t tried them yet, here is one to get you started! You Need: 2 Lebanese/Pitta bread/Tortillas 1 cooked chicken breast (or ¼ cooked BBQ chook), sliced 1 avocado, sliced ½ cup cooked couscous 1 cup shredded lettuce (or Chinese cabbage/wombok) ¼ cup bean sprouts ¼ red onion, finely shredded ¼ cup grated cheese 2 Tblsp mayonnaise cracked black pepper
Method: Lay the Bread round on a bench/plate. Spread the filling ingredients down the middle of the bread. Sprinkle filling with mayonnaise, cheese and pepper. Bring the sides of the bread over the filling and roll up. If you like, place your Wrap in a flat sandwich grill for 2 minutes. Then slice in half diagonally and serve.
