Chocolate Risotto

This is really a version of creamed rice, which I love – and this one has the added ingredient of chocolate! What more could you want on a chilly winter’s evening!

Degree of difficulty: Low

You need:
600ml skim milk
25 g sugar
50g butter
125g risotto, arborio or short grain rice
50g walnuts, toasted and chopped
50g sultanas
125g dark chocolate, grated
1 teaspoon brandy
chocolate for decoration

Method:
Mix together the milk and sugar in a small saucepan and heat til almost boiling – bubbling, but before the milk foams up the sides of the pot.

Melt the butter in a large, heavy-based saucepan. Add the rice and stir to coat well with butter.

Gradually, stir the hot milk into the rice and butter mixture, stirring constantly til creamy. Sprinkle the chopped walnuts, sultanas and grated chocolate and brandy into the rice. Mix quickly and serve immediately.

Serving Suggestion: Sprinkle with grated chocolate and desiccated coconut.
