CORIANDER AND CHILLI BUTTER This tasty butter is easy to make, keep the roll in the fridge and slice it to add to steak, fish and even corn cobs for a fresh summer flavour.
You Need: 125g softened butter 1 tsp grated lime rind 1 red chilli, seeded and finely chopped 1 Tblsp chopped fresh coriander 1 clove of grlic, crushed
Method: Combine the ingredients in a small bowl and mix together well. Spread the butter along a length of alfoil or plastic wrap and used the edges of the foil/plastic to roll in into a log shape. Refrigerate for 30 minutes before using. Great with chicken, fish, beer or vegetables!
