This is a tasty way to enjoy fresh lobster/crayfish – the origins of the name are obscure – which says a lot about lawyers… 

 

You Need: 

1 fresh lobster

3 tblsp real butter

salt and freshly cracked black pepper

4 tblsp Irish Whiskey

½ cup thickened cream

 

Method:

Remove the meat from the lobster, saving the shell for presentation if you wish.

Cut the meat into chunks and sauté in the butter, being careful to not let it burn.

Season with salt and pepper.

Pour the whiskey over the top and light with a match so it burns off most of the alcohol.

Mix in the cream, but be careful to simmer and not boil.

Return the mixture to the shells and serve with a salad and drink of your choice!
