EASTER MUFFINS

 

The basic muffin recipe here can be enjoyed any time but the addition of little caramel easter eggs adds a special seasonal treat!

You Need: 

 2 cups plain flour

3 tsp baking powder

1 tsp salt

2 tblsp sugar

2 eggs, beaten

1 cup milk

¼ cup melted butter

1 pkt caramel mini-eggs, peel off foil wrapping!

 

Method:

Sift the flour, baking powder and salt into a bowl. Add the sugar.

Combine the eggs,  milk and butter.

Add the ‘wet’ ingredients to the ‘dry’ ingredients – stir roughly with a fork but don’t over mix – a bit lumpy is OK!

Spoon into greased muffin tins, half filling them.

Push a caramel egg deep into the middle of each muffin, if necessary spoon a bit more muffin mix on top.

Bake in a hot oven (200C) for 15-20 mins.

Take care not to burn your mouth on the melted chocolate eggs! A tip is to freeze the eggs for an hour before use, and sit the muffins for a few minutes before serving.
