EGGS BENEDICT

This is always popular for a special brekky, so why not serve it up to Dad on Father's Day!

You Need: 

1 English Muffin

2 slices of finely shaved ham

or smoked salmon, or spinach

2 poached eggs

1 pkt of Hollandaise Sauce mix

Parsley for garnish

 

Method:

Prepare the Hollandaise sauce according to the instructions on the packet. Keep warm.

Split the muffin and toast both sides.

Put the ham (or salmon/spinach) on top.

Sit a poached egg on top of the ham, one on each half muffin.

Cover generously with Hollandaise Sauce.

Sprinkle with fresh parsley and serve with a Smile!
