need: Method: Mix together the herbs & peppers and coat the fish in the mixture. Heat the oil in a pan and fry the fillets over a medium heat until cooked through. To make the topping: combine the corn kernels, eschallots, capsicum, tomato and lime juice. Season with salt and pepper. Serving Suggestion: Place the cooked fish on a serving platter and spoon the topping over the fish. |
