Grilled Fish with Corn Salsa

This is a tasty and colourful way to serve up your catch of the day!

Degree of difficulty: Low

You need:
4 fillets of white fish (mackerel, barramundi etc)
1 cup corn kernels
2 eschallots
1 green capsicum, seeds removed and finely chopped
2 ripe tomatoes, finely chopped
3 tsp lime juice
1 tblsp olive oil
1 tsp Italian herbs
1 tsp black pepper
pinch of cayenne pepper

Method:

Mix together the herbs & peppers and coat the fish in the mixture. Heat the oil in a pan and fry the fillets over a medium heat until cooked through.

To make the topping: combine the corn kernels, eschallots, capsicum, tomato and lime juice. Season with salt and pepper.

Serving Suggestion: Place the cooked fish on a serving platter and spoon the topping over the fish.
