Marian’s Magic Ginger No Bake Cake

 

This is a really amazing way to conjure up a cake without baking a thing! When you soak the ginger biscuits, they magically soften and blend with the cream, and their texture changes to that of cake, so you end up with this delicious, spicy cake – without all the fuss of baking! Thanks to my best friend, Marian, all the way from Ireland!

Degree of difficulty: Low

You need:
2 packets of Ginger Biscuits
500ml thickened cream, whipped
½ bottle Cream Sherry
Chocolate Sprinkles for decorating
2 mandarins (or strawberries) for decorating

Method:
Pour the sherry into a shallow bowl. Dip the biscuits into the sherry – don’t leave them too long or they will be too soggy.

Place a dollop of cream on the biscuit and sandwich it with another biscuit soaked in sherry. Continue with this, forming a circle or log shape until you have the required size.

Cover the circle or log with the remaining cream and chill in the fridge for an hour or so.

Decorate with chocolate sprinkles or decoration of your choice!

Enjoy!

Serving Suggestion: Serve with chocolate sprinkles on top and a mandarin orange segment.
