Halloween Muffins

My favourite Halloween food was always a tasty coconut! So here are some muffins featuring the tasty Halloween flavours of coconut, banana and maple syrup!

Degree of difficulty: Low

You need:
2 cups self-raising flour
1/3 cup plain flour
½ teaspoon bicarb soda
½ cup brown sugar
¼ cup maple syrup (flavoured syrup = ok)
2 ripe bananas, mashed
2 eggs, lightly whisked
1 cup skim milk
1/3 cup vegetable oil

Coconut Topping:

15g butter, melted

1 tablespoon maple syrup

2/3 cup flaked coconut

 

Method:

Grease a 12-cup muffin tray and pre-heat oven to moderately hot.

Sift dry ingredients into a large bowl. Make a well in the centre and stir in the maple syrup, mashed bananas, eggs, milk and oil.
Spoon into muffin tray, sprinkle with shredded coconut and bake in moderately hot oven for about 20 minutes.

Mix together the butter and maple syrup (you can dissolve them together in the microwave or in a saucepan). When the muffins are cooked, remove them from the oven and drizzle with warmed syrup & butter.
