Sweers Hush Puppies

This is an Aussie version of an American Gulf dish! Hush Puppies are little deep-fried balls of dough, like savoury damper dumplings – yummy!

Degree of difficulty: Low

You need:
2/3 cup burghoul (ideally, cornmeal!)
1/3 cup plain flour
2 tablespoons cornflour
1 teaspoon baking powder
½ teaspoon salt
2 eschallots, finely diced
1 egg, whisked with:
1/3 cup skim milk
oil for deep frying

Method:
Combine the burghoul (or cornmeal), flours, baking powder, salt and eschallots in a large bowl. Add the egg and milk, whisk in to make a thick batter/light dough.

Heat oil in frypan. Drop in spoonfuls of the dough/batter. Cook til golden and cooked through (just a minute or so.) Serve warm with sweet thai chilli sauce for dipping.
