Lamb Shanks

Lamb Shanks are a delicious old-fashioned dish that can be prepared in many different ways. Here is one of our favourites!

Degree of difficulty: Low

You need:
6 lamb shanks
½ cup plain flour, seasoned with salt & pepper
2 tablespoons olive oil
1 ½ cups orange juice
1 tablespoon orange rind, finely grated
2 teaspoons brown sugar
2 teaspoons grated ginger
1 sprig fresh rosemary

Method:
Put the seasoned flour into a bag or bowl and coat the lamb shanks thoroughly.

Heat the oil in a heavy based baking tray on top of the stove, and brown the lamb shanks, turning frequently to brown the outside and seal in the juices.

Mix together the orange juice, rind, brown sugar and ginger, and pour over the lamb shanks.

Cover the pan with alfoil and bake in a moderately hot oven for 1-2 hours depending on the size of your lamb shanks.

Remove the foil and bake for another half hour or til meat is tender. If the pan dries out, add some more orange juice or water.

Serving Suggestion: Sprinkle with finely cut shreds of orange rind and a sprig of fresh rosemary. Nice with some green beans and creamy mashed potato…
