COCONUT LEMON SYRUP MUFFINS

 This is the tastiest muffin yet! Moist, and not too sweet – it is well worth the extra effort to grate the lemon etc.

You Need: 

 

 MUFFINS

2 cups Self Raising Flour

90g Butter

¾ Cup sugar

1 cup coconut

1 Tblsp grated lemon rind

1 egg, lightly beaten

1 cup coconut milk/cream

2 Tblsp shredded coconut

 

 LEMON SYRUP

½ cup caster sugar

¼ cup water

2 teaspoons grated lemon rind

¼ cup lemon juice

 

Method:

 Grease a 12-hold muffin pan.

Sift the flour into a large bowl. Rub in the butter then add the sugar, coconut, rind, egg and coconut milk/cream.

Spoon the mixture into the muffin pan. Sprinkle with shredded coconut. Bake in a moderately hot oven for 20 minutes.

Pour the hot lemon syrup over the hot muffins. Turn onto a wire rack to cool.

 LEMON SYRUP: Combine all ingredients in a small pan, stir over heat without boiling, til sugar is dissolved, then simmer for about 2 minutes without stirring.
