APRICOT MEAT LOAF

 

This is a tasty and unusual meatloaf – the tangy apricots add flavour to brighten up a wintry day!

 

You Need: 

 

2 tablespoons oil 

2 onions, finely chopped

½ cup chopped (tinned is ok) apricots

¾ cup stock (chicken, beef or vegetable)

1 teaspoon dried herbs

4 cups diced stale bread

1 kg minced beef

1 egg, lightly beaten

salt and pepper

2 teaspoons chopped parsley

apricot halves and syrup for garnish

 

Method:

Heat the oil in a frypan and fry the onions til softened.

Add the chopped apricots, stock and herbs, bring to the boil.

Add the diced bread and simmer for a few minutes then remove from heat and allow to cool.

In a bowl, mix together the minced beef, beaten egg, salt, pepper & parsley. Spread this mixture on a piece of alfoil, patting out to a rectangular shape. Spread the bread mixture down the centre, and starting at the short end, roll the ‘loaf’ up, using the foil to curl the mixture over. Put into a baking dish, seam down and bake in a moderate oven for about an hour – brushing occasionally with some of the syrup from the tinned apricots.

Serve topped with apricot halves and your choice of vegetables.
