ORANGE CRUSTED FISH

 This is a delicious easy-to-prepare meal with wonderful fresh citrus flavours and makes a really unusual “Fish & Chips!”

 

You Need: 

 

spray oil

3 slices of white bread

¼  cup of fresh parsley, finely chopped

1 orange, with the rind finely grated

1 red chilli, seeds removed and chilli finely chopped

4 white fish fillets

 

Method:

 

Heat the oven to 200C.

Process the bread into fine crumbs (in a food processor is easiest).

In a bowl, mix together the breadcrumbs, chopped parsley, rind, chilli, salt and pepper.

Spray a baking tray with oil.

Spray the fish with oil. Press some of the crumb mixture onto the fish and lay the pieces on the oiled baking tray, crumbed side down.

Spray the top (uncrumbed side) of the fish with oil.

Press the rest of the crumb mixture onto the fish pieces.

Cook in a hot oven for 15 minutes til cooked through.

Serve with your favourite veggies, a fresh garden salad or – chips!
