GOLDEN PEANUT POTATOES

 

This is a tasty way to dish up the humble spud – either as a snack or part of a main meal.

 

You Need: 

 

6 potatoes, peeled and sliced

60g butter

125g cornflake crumbs

125g shelled and crushed peanuts

1 teaspoon garlic salt or onion salt

 

Method:

 

Mix together the cornflake crumbs, the crushed peanuts and the garlic salt in a small bowl.

Melt the butter in a small saucepan.

Coat the potato slices in the melted butter, then in the peanut/crumb mixture.

Arrange them on a baking tray and bake in a hot oven (200C/400F/Gas 6) for 45 minutes to an hour, or til tender.
