POTATO AND BACON BALLS This is a tasty and different way to dish up your ‘Praties’ on St. Patrick's Day! Degree of difficulty: Low You need: 12 small potatoes, preferably ‘Chats’ 6 slices of bacon, halved to give 12 long strips 12 bay leaves Method: Pre-heat your oven to moderately hot, about 180C. Scrub the potatoes and wrap a piece of bacon around each one, tucking a bay leaf under the bacon, and securing with a toothpick. Place the potatoes in a baking dish, spray or drizzle with olive oil. Bake for 30-40 minutes or til potatoes are tender and crispy.
Serving Suggestion: Remove toothpick and serve as a snack with a pint of Guinness or as part of the main meal (who said Guinness wasn’t a main meal!) |
