Prawn & Asparagus

If you have access to fresh prawns and fresh asparagus, then this is the dish for you!

Degree of difficulty: Low. Serves 2

You need:
2 cups white rice
16 prawns
4 sticks of fresh asparagus, snapped in halves
½ (425g) tin baby corn

½ cup soy sauce
2 tablespoons lemon juice
2 tablespoons honey

Method:
Peel & de-vein the prawns. Put into a glass bowl with the soy sauce, lemon juice & honey. Marinate for at least half an hour, more is good.

In a microwave-safe dish, place the prawns, asparagus, and corn. Pour over some of the marinade.

Cook in microwave oven for 4 minutes on high (this could need more time, depending on the power of your microwave oven)

Serving Suggestion: Serve up the rice and prawns, arranging the veggies on top, and drizzle some sauce on top.
