PUMPKIN SOUP

An old favourite – but not everyone has their own favourite version, so if you don’t have a recipe, here is a good one for you!

 

You Need:  Pumpkins make delicious soup!

 

750g pumpkin

15g butter

1 medium onion, diced

2 rashers of bacon, diced

1 litre of water

1 chicken stock cube

1/2 cup cream

 

Method:

 

Peel the pumpkin, remove the seeds and chop into smallish pieces. 

Melt the butter in a heavy-based saucepan.

Add the onion and bacon and cook, stirring regularly, until onion is soft.

Add the pumpkin, the water and stock cube. Bring to the boil and simmer (covered) for about half an hour or so, til the pumpkin is really soft.

Remove from the heat and let the soup cool down.

Process it in batches in a blender. Pour it back into the saucepan and stir in the cream. Reheat it to serve.

To serve: put some cream into a sauce bottle with a pointy ‘spout’. Pour a little cream onto each bowlful and use a skewer to make a ‘squiggle’ fancy design on it. Sprinkle with a little finely chopped parsley for extra garnish if you like.
