STUFFED SAUSAGES

This is a bit like a ‘Carpetbag Snag’! This recipe features smoked oysters but use your imagination and try some others – prawn and avocado, asparagus…

 

You Need: 

 

10 big fat sausages

2 x 100g tins of smoked oysters, drained

1 Tblsp lemon juice

2 Tblsp mustard

1 tsp sugar

 

Method:

 

Fill a pot with cold water and put the sausages in it. Bring it to the boil, simmer for 10 minutes, remove from the heat, drain and cool the sausages.

Cut a slit lengthways in the sausages, not going all the way through.

Prise it open and press in the smoked oysters. If you need to, secure the openings with toothpicks.

In a jar, shake together the lemon juice, mustard and sugar. Brush the sausages with the mixture then barbeque or grill for 5 minutes til crisp and browned.
