THAI CHICKEN SALAD

 A nice cool dish for these hot summer days…

 

You Need: 

4 chicken breasts, cut into strips

1 tsp grated ginger

1 tsp crushed garlic

2 tblsp soy sauce

1 tblsp oil

3 shallots, chopped

˝ red capsicum

˝ green capsicum

8 snow peas

2 tblsp chopped parsley

2 tblsp sweet thai chilli sauce

1 tblsp brown vinegar

2 tblsp oil, extra

 

Method:

Combine the chicken strips with garlic, ginger and soy sauce in a glass bowl. Cover and refrigerate for about 2 hours.

Heat oil in a heavy pan or wok and cook the chicken in small batches. Combine with sliced onions, capsicum, peas and parsley on a serving platter.

Mix chilli sauce, oil, and vinegar in a glass jar and shake well to mix. Pour over salad and toss lightly to combine all ingredients.

Serve immediately.
