VALENTINES ORANGE CHOCOLATE MOUSSE

Degree of difficulty: Medium.  Serves 2

This is a special tasty treat for any time of the year – but if you prepare it in heart-shaped moulds it is just perfect for Valentine’s Day!

60g dark chocolate buds, melted

15g butter

60g dark chocolate buds, melted

1 tablespoon orange flavouring/liqueur

2 eggs, separated into yolks and whites

2 teaspoons gelatine

1 tablespoon water

200ml cream

Method:

Melt the chocolate and butter together. Paint the inside of a heart-shaped mould and put it in the freezer for a few minutes to set before turning out onto a plate. Keep it in the fridge while you prepare the mousse.

Melt the chocolate and set aside to cool for a few minutes. Sprinkle the gelatine over the water, whisk together and microwave for 30 seconds to dissolve the gelatine. Allow to cool for a few minutes.

Whisk the egg whites to soft peaks.

Whisk the cream.

Whisk the egg yolks and orange essence into the melted chocolate. Add the gelatine and mix well.
Fold the cream into the chocolate mixture.

Fold the whipped egg whites into the chocolate mixture.

Spoon the mousse mixture into the chocolate heart mould.

Set in the fridge for several hours or overnight.

To serve: mix a little orange essence/liqueur into some pouring cream and spoon onto a serving plate. Sit the chocolate heart mousse on top and garnish with some piped cream, a slice of orange and a mint leaf.
