CHICKEN YO-YOS

 

These tasty little parcels are a meal in themselves, with meat and veg. IdeaL for lunchbox or picnics. You can select low-fat ingredients too!

 

You Need: 

 

2 sheets puff pastry

500g chicken mince

3 eschallots, chopped

1 Tblp chopped parsley

1 clove garlic, crushed

100g grated cheese

125g spinach, well-drained

2 cups of frozen diced vegetables

1 beaten egg

 

Method:

 

Mix together the chicken mince, eschallots, parsley, & garlic.

Lay one sheet of the puff pastry on a large sheet of greaseproof or baking paper.

Brush one edge of the pastry and overlap the other slice on top, pressing together to form a large rectangle.

Spread the chicken mixture on top, leaving a border about 5cm wide on one short edge.

Add a layer of cheese on top, then the spinach, and diced vegetables.

Use the paper to help you roll it up like a ‘swiss roll’.

Slice it carefully into rolls about 3cm thick. Lay these on a greased oven tray, cut side up.

Brush the beaten egg on top and bake in a moderately hot oven (about 220C) for 20-25 minutes til pastry is cooked golden.
